Rare roasted wahoo with shaved fennel, pickled radish and sesame

Whipped goat’s cheese with ruby beetroots, walnut biscuit and balsamic


Crab salad with watermelon, pickled cucumber, mint and yoghurt

Local heirloom tomatoes with smoked ricotta, black olives and pine nuts


Fillet of red snapper with white bean and pesto ragout, crushed zucchini and Asiago

Adobo spiced chicken, fingerling potato, corn and spinach salad with mango chutney

Roast Angus tenderloin and oxtail croquettes with soft polenta, red wine and garlic sauce

Baked grouper with a shrimp and coconut crust, sea lettuce and lemon grass cream
