pan seared diver scallops, white rum pickled cockles, green apple batons,  apple ginger mojito jellies, watercress.

seared Hudson valley grade A foie gras, toasted Jamaican ginger bread, house made orange spiced rum marmalade, herb salad, blood orange jelly.

local lobster risotto

sautéed citrus butter cayman spiny lobster, lobster bisque risotto, parmesan.

baked grouper, cashew nut & lime leaf crust, sautéed baby bok choy,

lemon grass foam.
