Upstairs Rare Rum Bar and Lounge

A unique collection of rare rums from around the Caribbean, hand selected by owner and rum enthusiast Daniel Petts.  Rums to be savored and sipped, much of the collection is unusual, and cannot be found elsewhere in Grand Cayman. Enjoy a ‘flight’ – a tour of rums, or simply ask to be talked through the experience.

Daniel Petts, owner and rare rum aficionado has been shopping again, and this time at the international Rumfest 2012. He has brought home some unique beauties from surrounding islands of the Caribbean, as well as far flung lands, such as France, Philippines and Peru. The selection keeps growing, there are now 56 rare rums in our cabinet! If you would like to sample a unique sipping rum, you have to vist the Rare Rum Bar and Lounge at Upstairs restaurant, Kaibo, because you won’t find these rums elsewhere in Cayman!

The Rare Rum Supper Club

Our monthly rare rum dinners are frequented by rum aficionados and enthusiastic rum apprentices alike. This intimate supper club will introduce you to the many flavors of rare rums, some interesting rum cocktails, a few fine wines, and how their flavors can be complemented with food. The menu is prepared by michelin star award winning chef Laurence Tham. Numbers are strictly limited to 30 people so please remember to book ahead to avoid disappointment.

This throwback style of rum uses pre Hispanic aging techniques which are combined with modern aging. The bottle is an individual work of art by arist Victor Fernandez. In the mouth, the rum feels old and tastes aged; soft leathery and wood tannins give way to fresh cut cocoa bean & oolong tea with whispers of caramel sweetness.

Made from sugar cane honey, this fine rum is a blend of rums aged for up to twelve years, warm rich caramel massage your senses. At first whiff, citrus peel, followed by vanilla. All spice and toasted sugar flavors hit your tongue. The entry is lightly spiced butter.

Double aged rum born and aged in the Caribbeans hot & humid climate, transferred and finished in young bourbon casks in Cognac Ferrand’s chateau de Bonbonnet. Its superior quality is evident on the nose, which is creamy and rich with a butterscotch-like character. On the palate the spirit is very complex. Notes as varied as coconut, vanilla, orange peel, cinnamon, banana, and warm tobacco are evident, and they linger for quite some time in a warm finish.

Upstairs restaurant

The Upstairs restaurant at Kaibo is a hidden gem, only open Thursday Friday Saturday and Sunday nights. Alfresco dining on the patio overlooking the marina, with food from Chef Laurence Tham from London. Reservations are essential.

Upstairs cocktails

The Upstairs cocktail lounge offers a list of sensations which can only be experienced and not described here on a website. If you need a head’s up, ask for The Smoking Gun, you are guaranteed to be impressed.
